Serves 10 guests
For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
For the Syrup: Combine all the items in a pot, bring to a light boil, mixing so the sugar melts. Then, turn off the heat and leave to cool fully. Transfer into an sterilised bottle, cap it keeping it in the fridge, it can be stored for around one month.
To make Batch Mix: Pour all the spirits and syrup into a sizeable container, allow it to infuse for an hour, then pass it through , ideally through a fine cloth, so it's completely strained.
For serving: Measure 85ml of the batch mix into your mixing glass filled with ice, and stir lightly for a minute until cold. Pour to a cold coupe glass or a similar vessel, top with the cranberries and complete it by giving it a light spray of mandarin oil over the top.
